From Night Market to Pizza Hotspot: Giulia's Pizza Rises with Loyverse


In the heart of a bustling Thai night market, a spontaneous idea between two friends turned into a flourishing pizzeria—Giulia’s Pizza. What started as a casual conversation evolved into a small but growing business with a simple mission: serve affordable, homemade pizza to locals and tourists alike. The shop operates daily from 4 p.m. to midnight and thrives on its cozy charm and flavorful offerings.
In this interview, we speak with the owner of Giulia’s Pizza about their journey, challenges, and how Loyverse POS plays an essential role in their daily operations. If you're dreaming of starting your own business, their story might just inspire you.

What type of business do you have, and what is its background story?
I wanted to travel and explore all of Asia, and I discovered that Thailand was the best destination for me. I have a friend who lives in Thailand, and one evening, while talking near a billiard table, we decided to open a pizzeria. There was an opportunity in the night market, and we said, “Why not give it a try?”
We started as a small shop in the market to test the idea. If it worked, we planned to open more locations. So, we didn’t start with a detailed plan—but we also didn’t want to let the opportunity pass. We officially opened the shop on February 17. We're open every day from 4 p.m. to midnight.

What was the vision that you initially had for your pizza shop?
It all started with a simple conversation with my friend, who is a French baker. I didn’t have a clear vision at the beginning, but I knew that if I wanted to live in Thailand permanently, I needed a business. This pizzeria became a way for me to build a foundation for the future.

What were your biggest challenges in the early days, and how did you navigate them?
The first challenge was learning how to run this kind of business, as I had no previous experience. The second challenge was hiring people, which is quite difficult in Thailand. Third, we had to create a comfortable experience for our customers, even though we were operating in a night market setting.
Building strong relationships with customers is essential. We have recurring customers, tourists, and some Thai locals. Each group is different, and we strive to meet the unique needs of every customer.

How did you discover Loyverse, and what made you decide to use it in your business?
I chose Loyverse based on a recommendation from my partner, who had used it in his bakery and was very satisfied. We wanted something that was easy to use and easy to set up.
Since we only offer a few types of dishes, we didn’t need a large or complex system. One of the most important features for us was the Loyverse Dashboard app, which allows us to track business performance directly from our phones. That sealed the deal for us.

Which of Loyverse’s features has been most useful for your daily operations?
The most useful feature is the ability to connect Loyverse with a printer for order tickets and receipts. I also like that we can easily manage different types of pizzas and pasta.
Sometimes, we experience minor connectivity issues with the printer, but we can reconnect quickly, and the problem is resolved without hassle.

Do you use inventory management for the ingredients and products you sell?
No, we don’t. In this type of business, tracking every ingredient is very challenging. Our philosophy is to offer homemade pizza. We make our own dough, and most ingredients aren’t used in precise, measurable amounts for every recipe.
Instead, we rely on sales reports to track what we’ve sold—whether it’s pizza, pasta, or pastries. I regularly check the shift reports, and the Dashboard app lets me quickly see how many items we've sold over a week, a month, or two months.
The sales-by-item report helps us identify our best-selling items. That data helps us make sure those ingredients are always stocked. For the less popular ingredients, we can find alternatives if needed.

Do you offer a loyalty program for your customers?
No, our focus is on being delicious and affordable. Pizza is usually a bit pricey, so we’ve chosen to offer a lower-cost option with high quality. We let customers decide based on taste and value.
Instead of a loyalty program, we use simple promotions—like “Buy 2, Get 1 Free.”

Is there any feature you’d like to add or improve in Loyverse to better support your business?
Yes, I’d like to suggest an improvement to the Dashboard app. Our shift runs from 4 p.m. to midnight or sometimes slightly past midnight. However, sales made after 00:00 are recorded as the next day in the Dashboard app, which can be confusing.
I’d love the option to customize the default time range in reports, so it always reflects our actual shift hours—not just from midnight to midnight. Of course, this isn’t a major problem, since the shift report works well. I can also manually select custom times in the reports, but having a default custom time setting would be a great improvement.

What are your plans for Giulia’s Pizza?
Right now, our focus is on making this first location successful. If we achieve that, we plan to open more branches. When that happens, we’ll definitely expand our use of Loyverse POS and take advantage of more of its features.

What advice would you give to young, aspiring entrepreneurs who want to open their own business?
Keep your idea simple. Running a business with a complicated concept is hard. Find a good, simple idea—and test it. That’s exactly what I’m doing with Giulia’s Pizza.
Start small and take things step by step. For example, we started with the shop, then we began using Google Ads, followed by partnering with Asia’s top delivery apps. The next step will be launching our social media presence—and likely a website too.
