We’ve been using the app for a few years now, once a year during a christmas market. If I activate a subscription to view unlimited sales history, will I be able to view the sales from the past years as well?

Yes. Once you subscribe to the Unlimited Sales History add-on, you'll be able to access and export all of your sales history (including the past years).
