Combo Composite Varient?

We are wanting to offer a Combo, but Composite Item might not be the best solution because of our Variants.

We have an item of Medium Drink setup with the Variants of; Pepsi, Mtn Dew, Dr Pepper, Starry, Agave Vanilla, Root Beer, Lemonade, Diet Pepsi.

In Composite, it requires us to add each Medium Drink as a Variant item, See Attached. This doesn't work because we need to track inventory of each drink we serve, which is setup as a Variant. 

Considering we are needing the Cups (Kids, Medium, Large, XLarge) and also the Product (Variant; Pepsi, Mtn Dew, etc), how do we do this for a Combo?

A secondary question is will the Composite items send the information to the KDS? Ie. Burger Combo has Whole Pickle, Fries, Drink. Burger goes to the Griddle KDS, Fries goes to the Oven KDS, Chips/Drink goes to the Runner KDS and the Pickle goes to the Finisher KDS.  I just want to make sure that the Combo orders route correctly and the Comment (Name of customer) also carries over to the KDS when within a Composite.
