How do l make a one off charge which l probably will not use again, or will be a different value

What I could suggest about this is that you can create an item called "One-off charge" and leave its price field blank. In this way, you can be able to enter different values each time you enter this item onto the ticket. Also, you could specify the name or what kind of one-off charge this item would be through the comment field, if you click the item in the Ticket Section of the sales screen.
