Time period for "Sale by item".

Hi I have one question.

For checking stock, I used for period by "sales by item" as below

does above period mean from 21:00 10th/Sep - 7:00 11th/Sep ?

I have to check stock every 3 time per day as

7:00am - 15:00pm

15:00pm - 21:00pm

21:00pm - 7:00am

does the 9pm mean exact 9:00?

The 9 pm means exactly 21:00 in military time and does not mean another thing.

I saved below 3 periodes for 1 day "sales by items"  and combined sales manually.

11 September 2022 7am - 3pm

11 September 2022 3pm - 9pm

11 Sep - 12 Sep 2022 9pm - 7am

and

I saved whole one period as

11 Sep - 12 Sep 2022 7am - 7am

 

I compared sales but I found there are not match between them

For example

11 September 2022 7am - 3pm  Water 8

11 September 2022 3pm - 9pm  Water 9

11 Sep - 12 Sep 2022 9pm - 7am  Water 10

Total water sales  was 27

But

11 Sep - 12 Sep 2022 7am - 7am  Water 31

 

There is 4 different waters.

Why does not match between them?
