Been working for two week on cash only and have some sales and stock items but would like to begin fro scratch 

with a fresh start, keeping all the inventory but starting sales at zero

You can cancel receipts in your account in the Back Office. 

When you cancel a receipt, it will not be accounted for in the reports, and all items will be returned to stock.
