In den Funktionen gibt es Schichten, die man aktivieren kann.

Gibt es eine Möglichkeit, die fortlaufende Nummerierung zu stoppen, bzw. wieder mit 1 zu beginnen?

The shift number cannot be reset to 1. The workaround you can use is to delete the POS used on your device and create a new POS instead. Each POS has its own shift numbering and starts from 1. But if you decide to delete a POS, first, please make sure all the receipts synchronised with the back office and the latest shift report closed on your device.office
