Customer pre-order

May I know how to make a Pre-order for customer. 

If using Open-tickets, inventory had not show it. After End-Day will be clean and nil data.

Also Pay-Later system.

You can make a pre-order for the customer only using the Open ticket functionality.

The inventory of the items added in the open ticket will not be reduced until the open ticket is charged.

But, open ticket will stay open as long as you need, it will not be disappeared after end day.

When the customer wants to make payment for this purchase, you can find this open ticket and close it.

i do pre orders for my cakes for my customers, how do i differentiate between normal paying customers and pre-order customer who will collect their cakes at a later date?  How do i tally the total number of cakes that the pre order customers order ?

I suggest you try to manage pre-order customers using the integration with the online ordering software provided by our partners: "OTTER" or "FeedUs" to keep those pre-order customers in one place. But please clarify the details of the available features directly with the OTTER or FeedUs teams.
